A Refreshing Polynesian Fruit Drink

Otai" is a traditional Polynesian fruit drink, especially popular in Tonga and Samoa. It is typically made from a blend of grated watermelon, pineapple, and coconut, mixed with water or coconut milk, and sweetened with sugar. The drink is refreshing, naturally sweet, and often enjoyed chilled.

Ingredients:

  • 4 cups watermelon (grated or mashed)
  • 1 cup pineapple (crushed or finely chopped)
  • 1 cup coconut milk (or shredded fresh coconut)
  • 2 cups cold water (adjust for consistency)
  • 2 tbsp sugar or honey (optional, to taste)
  • 1 tsp vanilla extract (optional, for extra flavor)
  • Ice cubes (as needed)

Instructions:

  1. Grate or mash the watermelon into a large bowl, ensuring it retains its juices.
  2. Add the crushed pineapple and mix well.
  3. Pour in the coconut milk and stir to combine.
  4. Add cold water gradually, adjusting to your preferred consistency.
  5. Sweeten with sugar or honey, if desired, and mix well.
  6. Stir in vanilla extract for added aroma (optional).
  7. Serve over ice cubes for a refreshing experience.

Serving Suggestion:

Enjoy chilled with a straw or spoon, as Otai has a slightly thick texture with fruit bits.
