A Refreshing Polynesian Fruit Drink
Otai" is a traditional Polynesian fruit drink, especially popular in Tonga and Samoa. It is typically made from a blend of grated watermelon, pineapple, and coconut, mixed with water or coconut milk, and sweetened with sugar. The drink is refreshing, naturally sweet, and often enjoyed chilled.
Ingredients:
- 4 cups watermelon (grated or mashed)
- 1 cup pineapple (crushed or finely chopped)
- 1 cup coconut milk (or shredded fresh coconut)
- 2 cups cold water (adjust for consistency)
- 2 tbsp sugar or honey (optional, to taste)
- 1 tsp vanilla extract (optional, for extra flavor)
- Ice cubes (as needed)
Instructions:
- Grate or mash the watermelon into a large bowl, ensuring it retains its juices.
- Add the crushed pineapple and mix well.
- Pour in the coconut milk and stir to combine.
- Add cold water gradually, adjusting to your preferred consistency.
- Sweeten with sugar or honey, if desired, and mix well.
- Stir in vanilla extract for added aroma (optional).
- Serve over ice cubes for a refreshing experience.
Serving Suggestion:
Enjoy chilled with a straw or spoon, as Otai has a slightly thick texture with fruit bits.
